Black Eyes Of Texas Casserole

Ingredients
  Ground meat 2 Pound
  Yellow onion 1 Large, chopped
  Canned jalapeno black eyed peas 15 Ounce (1 Can)
  Canned cream of chicken soup 10 3⁄4 Ounce (1 Can)
  Canned cream of mushroom soup 10 3⁄4 Ounce (1 Can)
  Hot enchilada sauce 1 Can (10 oz)
  Garlic powder/3 minced cloves 1 Teaspoon
  Tortilla chips 10 1⁄2 Ounce, divided (1 Bag)
  Grated cheddar cheese 3 Cup (48 tbs), divided
Directions

In a large skillet over medium heat, brown ground beef.
Add onion, black-eyed peas, undiluted soups, enchilada sauce and garlic; stir.
Grease 2 casseroles; layer 1/4 of chips on bottom of each casserole.
Top with 1/4 of meat mixture and 1/4 of cheese.
Repeat layering procedure.
Bake in preheated 350° oven 35 minutes.
