|Salmon steaks||6 (3/4 Inch Thick)|
|Butter||1 Tablespoon (for greasing)|
|Lemon juice||1 Tablespoon|
|Black pepper||To Taste|
|Mayonnaise/Other mayonnaise||3⁄4 Cup (12 tbs)|
|Shredded gruyere cheese/Cheddar cheese||2 Ounce (1/2 Cup)|
|Chopped green onions||1⁄4 Cup (4 tbs)|
|Finely chopped parsley||2 Tablespoon|
|Chopped dill weed/1 teaspoon dill weed||1 Tablespoon (Finely Chopped)|
|Red cayenne pepper||1 Pinch|
Generously grease a broiling pan.
Arrange salmon steaks on greased pan.
Sprinkle with lemon juice; season lightly with salt and black pepper.
Broil 4 to 6 inches from heat, 6 to 8 minutes or until fish tests done.
Meanwhile, in a medium bowl, beat egg whites until stiff but not dry.
Fold in mayonnaise, cheese, green onions, parsley, dill, pinch of salt and red pepper.
Spread mixture evenly over fish; broil until lightly browned
