Oregon Salmon

  Salmon steaks 6 (3/4 Inch Thick)
  Butter 1 Tablespoon (for greasing)
  Lemon juice 1 Tablespoon
  Salt To Taste
  Black pepper To Taste
  Egg whites 2
  Mayonnaise/Other mayonnaise 3⁄4 Cup (12 tbs)
  Shredded gruyere cheese/Cheddar cheese 2 Ounce (1/2 Cup)
  Chopped green onions 1⁄4 Cup (4 tbs)
  Finely chopped parsley 2 Tablespoon
  Chopped dill weed/1 teaspoon dill weed 1 Tablespoon (Finely Chopped)
  Red cayenne pepper 1 Pinch

Preheat broiler.
Generously grease a broiling pan.
Arrange salmon steaks on greased pan.
Sprinkle with lemon juice; season lightly with salt and black pepper.
Broil 4 to 6 inches from heat, 6 to 8 minutes or until fish tests done.
Meanwhile, in a medium bowl, beat egg whites until stiff but not dry.
Fold in mayonnaise, cheese, green onions, parsley, dill, pinch of salt and red pepper.
Spread mixture evenly over fish; broil until lightly browned
