California Shrimp Salad

Ingredients
  Medium shrimp 2 Pound
  Boiling water 1 Cup (16 tbs) (Adjust Quantity As Needed)
  Avocado 1 Large
  Green onion dressing 1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)
  Iceberg lettuce head 1 Large, shredded
Directions

Place shrimp in a pan, cover with boiling water, and simmer for 5 to 8 minutes or until shrimp turn pink; shell and devein.
Peel, pit, and cube avocado.
Place shrimp and avocado in a bowl.
Prepare green onion dressing and pour over, gently turning to coat well.
Cover and chill for 1 to 2 hours.
To serve, place shredded lettuce on a Serving platter.
With a slotted spoon, lift out shrimp-avocado mixture (reserve marinade) and mound onto lettuce, Pass reserved dressing to spoon over individual servings.
