Louisiana Yam Pecan Casserole

Ingredients
  Yams 4 Medium, cooked, peeled and mashed
  Lemon juice 1 Tablespoon
  Grated lemon rind 2 Teaspoon
  Chopped pecans 1⁄2 Cup (8 tbs)
  Butter 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Firmly packed brown sugar 1⁄2 Cup (8 tbs)
  Brown sugar 2 Tablespoon
  Chopped pecans 2 Tablespoon
  Grated lemon rind 1 Teaspoon
Directions

Combine yams, lemon juice, 2 teaspoons lemon rind, 1/2 cup chopped pecans, butter, salt and 1/2 cup brown sugar.
Mix well and spoon into a lightly buttered 1 1/2 quart casserole.
Combine remaining ingredients and sprinkle over yam mixture.
Bake in 350° F.oven 20 minutes or until hot.
This casserole can be prepared in advance, refrigerated and baked at serving time.
Add 15 minutes to baking time.
