|Saltine crackers||10 , coarsely rolled (Premium, About 2/3 Cup Crumbs)|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Egg whites||3 (At Room Temperature)|
|Granulated sugar||1 Cup (16 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
Combine cracker crumbs and pecans.
Add baking powder to egg whites.
Beat until soft peaks form.
Gradually add sugar and vanilla.
Continue beating until egg whites are very stiff and glossy, but not dry.
Fold in cracker mixture.
Turn into 1 9-inch ungreased pie plate.
Bake in a preheated oven (300°F.) 50 minutes.
Chill several hours.
