Cherry Tomato Conserve
|Tomatoes||4 Large, peeled and chopped|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Onion||1 Medium, chopped|
|Green pepper||1 , chopped|
|Lemon||1 , thinly sliced|
|Ground ginger||1 Teaspoon|
|Red maraschino cherries||8 Ounce, drained and chopped|
|Nuts||1⁄2 Cup (8 tbs), chopped|
Mix tomatoes and sugar together in a sauce pan.
Let stand 3 hours, or until sugar is dissolved; stir occasionally.
Add onion, pepper, lemon slices, and ginger; mix well.
Bring to boiling.
Reduce heat and simmer until thick, 1 1/2 to 2 hours, stirring occasionally.
Remove from heat and mix in cherries and nuts.
Ladle mixture into hot sterilized jars and seal immediately
