Sauteed Cherry Tomatoes With Pine Nuts
|Olive oil||3 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Cherry tomatoes||12 Ounce, stemmed|
|Pine nuts||1⁄4 Cup (4 tbs) (Toasted)|
|Chopped basil/2 teaspoons dried, crumbled||2 Tablespoon, crumbled|
|Red wine vinegar||1 1⁄2 Tablespoon|
Heat oil in heavy large skillet over medium heat.
Add garlic and tomatoes and saute until tomatoes are just heated through, stirring occasionally, about 5 minutes.
Add pine nuts, basil and vinegar and stir 1 minute.
Season with salt and pepper.
Transfer tomato mixture to small shallow platter.
Garnish with fresh basil sprig and serve.
