Stuffed Tomatoes

Luscious stuffed tomatoes with celery greens and avocados is an intersting side dish or meal accompaniment for any dinner or lunch. Easy to prepare yet delicious, this stuffed tomatoes recipe is great for both vegetarians and non-veggies.
Ingredients
  Ripe firm tomatoes 8
  Avocado pear 2 (Ripe)
  Lemon 1 , juiced
  Onion juice 1 Tablespoon
  Salt To Taste
  Black pepper To Taste
  Chili powder 1 Pinch
  Chopped celery/Green pepper 4 Tablespoon
  Chopped parsley 1 Tablespoon
Directions

Peel the tomatoes after plunging them into boiling water for 1 minute and then in cold water.
Cut in half crossways and remove the seeds and pulp.
Cover loosely with foil and chill in the refrigerator until required.
Peel the avocados, remove the seed and mash well with a wooden spoon.
Add lemon juice, salt, pepper, chili powder and celery or green pepper.
Set aside to chill.
When ready to use, fill the tomato halves with the avocado mixture and sprinkle with parsley.
