Remove stem and core of tomato.
Hollow out inside (save pulp to add to other salads or cut up and add to mixture that will be used to stuff tomato).
Fill with: corn relish, seafood or chicken salad, marinated cooked vegetables, coleslaw cottage cheese, cucumbers in sour cream or rice salad.
Garnish with chives, crumbled bacon, shredded or crumbled cheese or chopped parsley.
Fresh vegetables are enhanced by the flavor and aroma of grated Parmesan.
