|Olive oil||1⁄4 Cup (4 tbs)|
|Wine vinegar||2 Tablespoon|
|Garlic||1 Clove (5 gm)|
|Basil leaf||1⁄4 Teaspoon|
|Snipped parsley||1 1⁄2 Teaspoon|
|Sliced green onions||2 Tablespoon|
Dip tomatoes into boiling water for about 5 seconds or just long enough to loosen skins.
Slip off skins.
Cut into thick slices (about 1/2 inch).
Combine all remaining ingredients except onions in a large flat dish that is large enough to hold the slices of tomatoes in a single layer.
Put tomato slices into mixture and turn once.
Sprinkle with onions.
Cover tightly and refrigerate 1 hour, turning slices once more during chilling.
