Fresh Mozzarella With Tomatoes

Ingredients
  Fresh mozzarella 375 Gram
  Cherry tomatoes 500 Gram
  Sliced sun dried tomatoes 50 Milliliter
  Shredded basil/Chopped parsley 50 Milliliter
  Toasted pine nuts/Sliced almonds 25 Milliliter
  Red wine vinegar 25 Milliliter
  Pepper 1 Milliliter
  Garlic 1 Clove (5 gm)
  Salt To Taste
  Olive oil 125 Milliliter
Directions

Cut cheese into 1 inch (2.5 cm) cubes.
In bowl, combine cheese, cherry tomatoes, sun-dried tomatoes (if using), basil and pine nuts.
Dressing: In small bowl, combine vinegar, pepper, garlic, and salt to taste; whisk in oil.
Taste and adjust seasoning if necessary.
Pour over salad and toss to coat well.
Marinate for at least 30 minutes at room temperature or cover and refrigerate for up to 2 days.
(Remove from refrigerator 30 minutes before serving.)
