Fresh Mozzarella With Tomatoes
|Fresh mozzarella||375 Gram|
|Cherry tomatoes||500 Gram|
|Sliced sun dried tomatoes||50 Milliliter|
|Shredded basil/Chopped parsley||50 Milliliter|
|Toasted pine nuts/Sliced almonds||25 Milliliter|
|Red wine vinegar||25 Milliliter|
|Garlic||1 Clove (5 gm)|
|Olive oil||125 Milliliter|
Cut cheese into 1 inch (2.5 cm) cubes.
In bowl, combine cheese, cherry tomatoes, sun-dried tomatoes (if using), basil and pine nuts.
Dressing: In small bowl, combine vinegar, pepper, garlic, and salt to taste; whisk in oil.
Taste and adjust seasoning if necessary.
Pour over salad and toss to coat well.
Marinate for at least 30 minutes at room temperature or cover and refrigerate for up to 2 days.
(Remove from refrigerator 30 minutes before serving.)
