1. Preheat oven to 230 degree F or 110 degree C.
2. On wire rack, lay tomato skin side down and drizzle olive oil.
3. Sprinkle oregano liberally on top.
4. Season it with thyme, black pepper, and sea salt.
5. Lightly dust icing sugar on top of tomato pieces.
6. Pop the rack in oven and cook for 4-5 hours.
7. Serve semi sun dried tomatoes as desired.
