Prepare and cook the tomatoes as described above, but use only olive oil for frying, and when you put in the tomatoes add a generous mixture of chopped garlic, parsley and shallot.
If you have not had time to get rid of the water in the tomatoes, counteract it by adding some crumbled soft bread to the garlic, parsley and shallot mixture.
