Recipe for Roasted Tomato Tart, My family loves this tart for breakfast, lunch and dinner. Roasted tomatoes are so easy to make and use to top tarts, on sandwiches and finely chopped are perfect in sauces! This tart base is infinitely versatile! You can combine the roasted tomatoes with fresh asparagus, sliced zucchini, ham or even cooked bacon for a heartier main dish! Looking for something new for your brown bag lunch? Ingredients
  Pie crust 1 Medium
  Riccota 1 Cup (16 tbs)
  Parmesan 1 Cup (16 tbs)
  Eggs 2 Medium
  Salt 1 Teaspoon (for the tart)
  Pepper 1 Teaspoon (for the tart)
  Campari tomatoes 8 Small
  Olive oil 3 Tablespoon
  Balsamic vinegar 1 Tablespoon
  Garlic 1 Clove (5 gm), chopped
Directions

GETTING READY
1.Preheat the oven to 450°F.
2.Cut the tomatoes in half and squeeze them to remove the seeds.

MAKING
3.On a baking sheet place all the tomatoes cut side up .
4.Sprinkle vinegar,garlic ,olive oil,salt and pepper.
5.Bake in the oven for 30 minutes.

FINALIZING
6.Take riccota in a large bowl and add parmesan,salt,pepper,eggs and mix well.
7.Fill the mixture in a tart shell which is half baked.
8.Top it with roasted tomatoes.
9.Drizzle some olive oil.
10.Bake in the oven for 40 to 45 minutes.

SERVING
11.Cut it into pieces and serve hot.
