Cooked Tomato Coulis

Ingredients
  Shallot/Small onion 1 , chopped finely
  Oil 30 Milliliter (2 Tablespoons, 15 Milliliter Each)
  Tomatoes 2 Pound, peeled, de-seeded and chopped (1 Kilogram)
  Bouquet garni 1 Small
Directions

MAKING
1. In a skillet, pour the oil and heat it, then add the shallots and saute it until they are soft
2. Also add the remaining ingredeints to the skillet and cook over medium heat for 20-30 minutes, until the ingredeint shave dried up and all the moisture is evaporated
3. Pour the ingredeints in a strainer and sieve properly, then season to taste

SERVING
4. Serve hot or cold along with chicken, fish, o lamb, preferably with an appetizer

TIPS
Tomato coulis can be reserved in the refrigerator for 2-3 days and it can also be frozen.
