Grandma June's Baked Tomatoes

Ingredients
  Tomatoes 3 Medium, blanched, peeled and seeded and quartered
  Finely chopped onion 1 Tablespoon
  Finely chopped celery 1 Tablespoon
  Finely chopped green pepper 1 Tablespoon
  Sugar 1 Teaspoon
  Tomato juice 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
  Seasoned salad croutons 1 Cup (16 tbs)
  Grated parmesan cheese 1⁄4
  Grated mozzarella cheese 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1)Preheat oven to 350 degrees

MAKING
2)Take abowl,mix the tomatoes with onion, celery, green pepper, sugar, tomato juice, salt, and pepper
3)Take a pan, and pour the above well mixed ingredients and cook.
4)Once the tomatoes start to break,its cooked.
5)Choose a 1 quart casserole dish and mix in 3/4 cup of the croutons.
6)Crush the rest of the croutons.
7)Add the parmesan cheese to them and sprinkle this mix on top.
8)Now bake this for 20 minutes.
9)Toss the mozzarella cheese over the top and bake for additonal 10 minutes.

SERVING
10)Serve hot and fresh
