Stuffed Cherry Tomatoes
|Ground smoked turkey||1 Cup (16 tbs)|
|Cream cheese||3 Ounce, softened (1 Package)|
|Commercial sour cream||1 Tablespoon|
|Grated parmesan cheese||1 Ounce (Use As Required)|
|Fresh parsley sprigs||4 (Use As Required)|
1)Wash tomatoes thoroughly.
2)Cut a thin slice from top of each tomato and carefully scoop out pulp, reserving pulp for other uses.
3)Invert the shells on paper towels to drain.
cream cheese ,sour cream ,salt and pepper in a mixing bowl and beat at low speed of an electric mixer until smooth.
5)Spoon about 2 teaspoons turkey mixture into tomato shells.
6)Sprinkle with cheese, and garnish with parsley sprigs.
