Microwave Tomato Casserole
|Tomatoes||4 Medium, quartered|
|Onion||1 Small, diced|
|Seasoned croutons||1 Cup (16 tbs)|
|Parmesan cheese||2 Tablespoon, grated|
|Chopped parsley||1 Tablespoon|
1. In glass microwave casserole, melt butter on ROAST (7) for 1 1/4 minutes. Add tomatoes, onion, salt and pepper to the dish and cook covered on HIGH (9) for 5 minutes. Stir once during cooking.
2. Toss in croutons and sprinkle with parsley and Parmesan cheese before serving
