Stuffed Cherry Tomatoes
|Cherry tomatoes||24 (Red Or Yellow)|
|Dry curd cottage cheese||1⁄2 Cup (8 tbs)|
|Minced spinach||1⁄4 Cup (4 tbs)|
|Minced fresh basil||1 Tablespoon|
|Snipped chives||2 Teaspoon|
Slice off the very tops of the tomatoes.
Use a small spoon to remove the insides; discard.
Turn the tomatoes upside down to drain while you prepare the filling.
In a small bowl, mix the cottage cheese, spinach, basil and chives.
Spoon into the tomatoes (or place in a pastry bag fitted with a large decorative tip; pipe the filling into the tomatoes).
