Salad Of Arugula And Cherry Tomatoes

Ingredients
  Arugula 1 Cup (16 tbs) (A Small Handful Per Person)
  Cherry tomatoes 24 (6 Per Person)
For creamy gorgonzola vinaigrette
  Dijon mustard 2 Tablespoon
  Tarragon vinegar 1⁄3 Cup (5.33 tbs)
  Olive oil 2⁄3 Cup (10.67 tbs)
  Gorgonzola cheese 1⁄3 Cup (5.33 tbs), crumbled
  Lemon juice 1 Tablespoon
  Black pepper To Taste, freshly ground
Directions

GETTING READY
1) Wash arugula carefully and pat dry.
2) Cut each tomato into two halves.

MAKING
3) In a large salad bowl,arange the arugula and the cherry tomatoes on it.
4) Mix together all the ingredients for the vinaigrette.

SERVING
5) Pour the dressing over the salad, toss well to combine and serve immediately.
