Sauteed Zucchini And Tomatoes

Ingredients
  Zucchini 12
  Salt To Taste
  Flour 6 Tablespoon
  Parmesan cheese 6 Tablespoon, freshly grated
  Black pepper To Taste, freshly ground
  Olive oil 4 Tablespoon
  Butter 4 Tablespoon
  Onion 1 Large, coarsely chopped
  Tomatoes 6 , peeled, seeded and chopped
  Coriander seeds 4 , crushed
Directions

GETTING READY
1) Thickly slice the zucchini.
2) In a saucepan with boiling water, cook the zucchini for 5 minutes or until just tender.
3) Drain water and pat dry with paper towels.
4) In a bowl, add flour, Parmesan cheese, salt and pepper to taste. Combine well.
5) Place the zucchini slices in this mixture and toss well to coat lightly.

MAKING
6) In a heavy skillet, add oil to heat up.
7) Add zucchini to sauté over a moderate heat until golden brown on all sides.
8) With a slotted spoon, remove the zucchini slices from the skillet.
9) Transfer on paper towel to soak the extra oil.
10) In a serving dish, pile up the zucchini slices and keep the dish warm.
11) In the skillet, add butter to melt.
12) Add onion to sauté until soft and transparent.
13) Add tomatoes and coriander seeds to simmer for 2 to 3 minutes longer.

SERVING
14) Place the tomato mixture around the zucchini slices. Serve at once.
