Ingredients
  Green tomatoes 8 Quart, thinly sliced (About 1/4 Bushel)
  Onions 12 Medium, thinly sliced
  Salt 1 Cup (16 tbs)
  Cider vinegar 3 Quart
  Brown sugar 4 Pound (4 Packages Of 1 Pound Each)
  Dry mustard 2 Tablespoon
  Whole cloves 2 Tablespoon
  Cinnamon sticks 2 (3 1/2 Inch Long)
  Ground ginger 2 Tablespoon
  Celery seeds 1 Tablespoon
  Green peppers 4 Medium, coarsely chopped
  Red sweet peppers 8 Medium, coarsely chopped
Directions

GETTING READY
1)Marinate sliced onions and tomatoes with salt and let stand ovenight.
2)Next day, drain and rinse in cold water.

MAKING
3)In a deep, large kettle, mix together vinegar and sugar until sugar completely dissolves.
4)In a cheesecloth bag, place mustard, cinnamon, cloves, ginger and celery seeds.
5)Add the bag to the vinegar, in the kettle, and bring to boil.
6)To the kettle, add onion and tomato mixture, pepper. Cook on low heat for 1 hour until tomatoes become transparent.

FINALIZING
7)Fill the mixture in hot sterilized jars. Make sure to leave headspace of about 1/8 inches.
8)Seal the jars with metal lids and tighten the metal bands.
9)Process the jars in boiling water bath for 10minutes.

SERVING
10)Serve with appetizers as dippings or with main course meal as accompaniment.
