Quiche Green Fried Tomatoes
|Salt||1 1⁄4 Teaspoon|
|Bacon fat||4 Tablespoon|
|Evaporated milk||1 Cup (16 tbs)|
|Sugar||1 1⁄4 Teaspoon|
Wash tomatoes, but do not peel.
Cut in half crosswise.
Mix flour, salt, sugar, and pepper.
Roll tomatoes, one at a lime, in flour mixture.
Brown on both sides in hot bacon fat.
Remove to serving dish and keep warm.
Add evaporated milk to same frying pan.
Boil slowly, stirring constantly until thickened (about 2 minutes).
Pour over tomatoes before serving.
