TOMATOES IN LAYERS

Ingredients
  Tomatoes 6 Medium
  Chopped parsley 2 Tablespoon
  White bread slice 2
  Butter 1 Tablespoon
  Soft bread crumbs 1 1⁄2 Cup (24 tbs)
  Chopped mint 2 Teaspoon
  Grated onion 1 Cup (16 tbs)
Directions

Melt a little butter and blend with the breadcrumbs.
Slice the tomatoes and spread out on a board.
Sprinkle with sugar, leave a few minutes then dust with vegetable salt.
Grease an oven dish and place a layer of crumbs on the bottom then a layer of tomato slices.
Sprinkle with parsley and mint mixed together, then a little grated onion.
Continue the layers ending with tomato.
Butter the slices of bread, and cut into 1 inch squares.
Lay these over the tomato layer, butter side up.
Bake in moderate oven for 30 minutes, until lightly browned.
