Spicy Tomato And Chorizo Sausage
|Baking potatoes||4 Large|
|Olive oil||30 Milliliter (2 Tablespoon)|
|Spanish onion||1 , chopped|
|Garlic||3 Clove (15 gm), crushed|
|Plum tomatoes||1 Pound, preferably plum, skinned and roughly chopped (450 Gram)|
|Chorizo sausage/Spicy sausage||5 Ounce, sliced (150 Gram)|
1)Bake potatoes in hot oven.
2)In a saucepan, heat some oil and saute onions in it until translucent and light brown in color.
3)Add in paprika and garlic. Saute for 2 minutes.
4)Add in chopped tomatoes and boil. Now add chorizo. Reduce heat and simmer for 20 to 25 minutes.
5)Once potatoes are baked and done, make slits on top surface and squeeze them to open slightly.
6)Top with the sausage mixture and serve steaming hot.
