Sherry Cherry Tomatoes

A decadant way to enjoy cherry tomatoes. We added the chia to make it a healthier dish & to show how easy it is to incorporate into your favorite foods.
Ingredients
  Extra virgin olive oil 2 Tablespoon
  Garlic 3 , finely chopped
  Onion 1 Small, finely chopped
  Cherry tomatoes 1 Pint
  Sherry vinegar/Dry sherry 2 Tablespoon
  Sugar 1 Teaspoon
  Crushed red pepper flakes 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Signature grain/Generic ground chia 1 Tablespoon
Directions

Preheat oven to 375 degrees F.
Preheat skillet over medium high heat. Add extra-virgin olive oil, garlic and onions. Give them about 3 minutes then add cherry tomatoes. Turn tomatoes to coat in fat. Add sherry vinegar or sherry, sugar, chia, pepper flakes and salt. Toss to coat tomatoes and roast for 18 to 20 minutes.
