Fried Tomatoes

Ingredients
  Tomatoes 4 Large (Green / Ripe)
  Flour 1⁄2 Cup (8 tbs)
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Butter/Margarine / drippings 1⁄2 Cup (8 tbs)
Directions

1. Wash tomatoes, cut out stems and cut each in 4 slices.
2. Mix flour with sugar, salt and pepper. Dredge the tomato slices in this mixture.
3. Heat 1/2 the drippings in a large frying pan. Put the tomato slices into the pan and brown on both sides, adding more fat as it is absorbed. When slices are done on both sides, remove to a hot platter and serve.
4. Good with these are White Sauce or Cheese Sauce or White Sauce to which prepared mustard is added in the proportion of 1 tablespoon of mustard to 1 cup of sauce
