Porgies Baked With Tomatoes

Ingredients
  Porgies 4 Pound, dressed (Four 1 Pound Each)
  Salt To Taste
  Onion 1 Small, chopped
  Olive oil 3 Tablespoon
  Basil 1⁄2 Teaspoon
  Bay leaf 1
  Pepper 1⁄4 Teaspoon
  Tomatoes 4 Large
  Water 1⁄2 Cup (8 tbs)
  Buttered cracker crumbs 1⁄2 Cup (8 tbs)
  Parsley 1 Tablespoon
Directions

Wipe fish with damp cloth and sprinkle lightly inside and out with salt.
Saute onion in the oil for 3 minutes.
Add basil, bay leaf, pepper, and 1/4 teaspoon salt.
Si mmer for 2 minutes.
Arrange fish in shallow baking dish and pour hot onion mixture over top.
Arrange tomatoes around fish.
Add the water.
Bake in preheated moderate oven (350°F.) for about 30 minutes.
About 10 minutes before fish are done, sprinkle tomatoes with the cracker crumbs.
When done, garnish with parsley.
