Tuna And Sun Dried Tomato Crostini
|French baguette slice||18 (1/3 Inch Thick)|
|Olive oil flavored vegetable cooking spray||1|
|Minced fresh basil||3 Tablespoon|
|Nonfat mayonnaise||2 Tablespoon|
|Plain non-fat yogurt||2 Tablespoon|
|Crushed garlic||1 Teaspoon|
|60% less salt tuna in water||6 1⁄8 Ounce, drained (1 Can)|
|Minced green onions||1⁄3 Cup (5.33 tbs)|
|Minced sun dried tomatoes||2 Tablespoon, dried|
|Chopped ripe olives||1 Tablespoon|
|Arugula/Bibb lettuce leaves||18 Large|
1. Spray both sides of each bread slice with cooking spray; arrange in a single layer on a baking sheet. Bake at 300° for 15 minutes or until lightly browned.
2. Combine basil, mayonnaise, yogurt, and garlic; stir well. Add tuna and next 3 ingredients; stir well.
3. To serve, place 1 arugula leaf on each bread slice; top each with 1 tablespoon tuna mixture.
