Tomato Cheese Grits
|Reduced calorie margarine||2 Tablespoon|
|Sliced green onion||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Hot water||1 3⁄4 Cup (28 tbs)|
|Quick cooking grits||1⁄2 Cup (8 tbs)|
|Tomato||1 Medium, seeded and chopped|
|Shredded cheddar cheese||1⁄4 Cup (4 tbs)|
In 2-quart casserole, combine margarine, onion and garlic.
Microwave at High for 1 1/2 to 2 minutes, or until tender.
Add salt, pepper and water.
Microwave at High for 3 to 6 minutes, or until water boils.
Stir in grits and tomato.
Microwave at High for 4 to 5 minutes, or until liquid is absorbed and grits are tender, stirring after half the time.
Stir in Cheddar cheese.
