Fancy Stuffed Tomatoes

  Ripe tomatoes 4 Large
  Bacon slices 6 , diced
  Chopped onion 1⁄4 Cup (4 tbs)
  Frozen chopped spinach 10 Ounce (1 Package)
  Commercial sour cream 1⁄2 Cup (8 tbs)
  Grated mozzarella cheese 1⁄2 Cup (8 tbs)
  Dried basil 1⁄4 Teaspoon

Cut a slice off stem end of tomatoes.
Scoop out pulp.
Place bacon in a flat glass casserole.
Cover with paper towel.
Microwave at HIGH 4 to 5 minutes.
Remove bacon with a slotted spoon.
Set aside.
Stir onion into bacon drippings.
Cover with paper towel.
Microwave at HIGH 2 minutes.
Pierce spinach package with a fork.
Place package on a paper plate.
Microwave at HIGH 3 to 4 minutes.
Drain well.
Add spinach to the onion.
Stir in bacon, sour cream, cheese, and basil.
Fill tomato shells with this mixture.
Place stuffed tomatoes in a glass casserole.
Cover with waxed paper.
Microwave at HIGH 4 to 6 minutes.
Let stand, covered, 1 minute
