Sweet Spicy Cucumbers Over Tomatoes
|Pickling cucumber||1 , thinly sliced to make 2 cups|
|Thinly sliced onion||1 Cup (16 tbs) (Vidalia / Other Sweet)|
|Cider vinegar||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Mustard seeds||1⁄2 Teaspoon|
|Garlic||4 Clove (20 gm), minced|
|Whole dried red chili||2|
|Freshly ground black pepper||1⁄8 Teaspoon|
1. Arrange half of cucumber in a 9-inch pie plate. Top with half of onion. Repeat procedure with the remaining cucumber and onion.
2. Combine vinegar and the next 5 ingredients (through chiles) in a small saucepan. Bring to a boil, cook for 1 minute or until sugar dissolves, stirring occasionally. Pour hot vinegar mixture over cucumber mixture. Cover and marinate in refrigerator 1 to 4 days.
3. Arrange tomato slices on a platter, sprinkle evenly with 1/8 teaspoon salt and black pepper. Remove cucumber mixture from marinade with a slotted spoon, arrange over tomato slices.
