Fried Tomatoes

Ingredients
  Ripe firm tomatoes 4 Medium
  Fine cracker crumbs 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Olive oil/Vegetable oil 1⁄4 Cup (4 tbs)
Directions

Cut tomatoes into 3/4-inch slices.
Mix cracker crumbs, salt and pepper.
Coat tomato slices with crumb mixture.
Heat oil in 12-inch skillet until hot.
Cook tomato slices in oil, turning once, until golden brown on both sides.
