Stuffed Cold Tomatoes

Ingredients
  Tomatoes 8 Large
  Mint leaves 3 , chopped
  Olive oil 30 Milliliter (2 Tablespoon)
  Wine vinegar 1 Teaspoon
  Cooked macaroni 375 Milliliter (Ready Cut, 1 1/2 Cups)
  Mustard vinaigrette/Substitute 45 Milliliter (3 Tablespoon)
  Chopped parsley 15 Milliliter, chopped (1 Tablespoon)
  Green pepper 1 , finely chopped
  Pickled sweet pimiento 30 Milliliter (2 Tablespoon)
  Salt To Taste
  Pepper To Taste
Directions

Using sharp knife and spoon, hollow tomatoes.
Discard insides and set shells aside.
Mix chopped mint, oil and vinegar together.
Season well and sprinkle in tomatoes; let stand 15 minutes.
Mix macaroni with remaining ingredients; let stand 15 minutes.
