Herbed Spinach Tomato Rockefeller
|Frozen chopped spinach||10 Ounce, thawed, drained, and squeezed dry (1 Package, 2 Cups)|
|Egg substitute||1⁄4 Cup (4 tbs)|
|Plain dried bread crumbs||3 Tablespoon|
|Minced scallions||2 Tablespoon (Green Onions)|
|Grated parmesan cheese||3⁄4 Ounce|
|Reduced-calorie margarine||4 Teaspoon, melted (Tub Variety, 1 Tablespoon Plus 1 Teaspoon)|
|Minced garlic||1 Teaspoon|
|Dried thyme||1⁄4 Teaspoon|
|Beef steak tomato||1 Medium, cut into 4 slices|
|Garlic salt||1⁄4 Teaspoon|
1. Preheat oven to 350°F. In large bowl, combine spinach, egg substitute, bread crumbs, scallions, cheese, margarine, garlic, and thyme.
2. Spray 2-quart baking dish with nonstick cooking spray; arrange tomato slices in single layer. Sprinkle evenly with garlic salt.
3. Mound about 1/4 cup of spinach mixture on each tomato slice; bake 15 to 20 minutes, until heated through.
