Herbed Spinach Tomato Rockefeller

Ingredients
  Frozen chopped spinach 10 Ounce, thawed, drained, and squeezed dry (1 Package, 2 Cups)
  Egg substitute 1⁄4 Cup (4 tbs)
  Plain dried bread crumbs 3 Tablespoon
  Minced scallions 2 Tablespoon (Green Onions)
  Grated parmesan cheese 3⁄4 Ounce
  Reduced-calorie margarine 4 Teaspoon, melted (Tub Variety, 1 Tablespoon Plus 1 Teaspoon)
  Minced garlic 1 Teaspoon
  Dried thyme 1⁄4 Teaspoon
  Beef steak tomato 1 Medium, cut into 4 slices
  Garlic salt 1⁄4 Teaspoon
Directions

1. Preheat oven to 350°F. In large bowl, combine spinach, egg substitute, bread crumbs, scallions, cheese, margarine, garlic, and thyme.
2. Spray 2-quart baking dish with nonstick cooking spray; arrange tomato slices in single layer. Sprinkle evenly with garlic salt.
3. Mound about 1/4 cup of spinach mixture on each tomato slice; bake 15 to 20 minutes, until heated through.
