Leeks With Tomatoes And Basil
|Butter/Margarine||4 Tablespoon (At Room Temperature, For Basil Butter)|
|Minced fresh basil||1 Tablespoon (For Basil Butter)|
|Leeks||4 Medium, trimmed|
|Extra virgin olive oil||1 Tablespoon (For Brushing Leeks)|
|Garlic||1 Clove (5 gm), minced|
|Freshly squeezed lemon juice||1 Tablespoon|
|Tomatoes||2 Large, sliced|
|Minced parsley||2 Tablespoon|
|Dried oregano||To Taste|
To prepare basil butter, soften butter in a bowl, using the back of a spoon or use a food processor fitted with steel blade.
Mix in basil.
Cut leeks in half horizontally and brush with olive oil.
Preheat stovetop grill.
Grill leeks over medium heat, cut side down, for 2 minutes.
Turn leeks over and continue grilling for 1 to 2 minutes.
Leeks should char slightly and be fork tender.
Remove leeks to a serving dish.
Sprinkle with garlic and lemon juice.
Surround leeks with sliced tomatoes.
Dot leeks with basil butter.
Sprinkle with parsley.
Season to taste with salt, pepper, and oregano.
