Vera Cruz Tomatoes

Ingredients
  Bacon slices 3
  Chopped onion 1⁄4 Cup (4 tbs)
  Spinach 1⁄2 Pound, snipped
  Dairy sour cream 1⁄2 Cup (8 tbs)
  Bottled hot pepper sauce 1 Dash
  Tomatoes 4 Medium
  Shredded mozzarella cheese 2 Ounce (1/2 Cup)
Directions

Cook bacon till crisp.
Drain; reserve 2 tablespoons drippings.
Crumble bacon; set aside.
Cook onion in drippings; stir in fresh spinach.
Cover; cook till tender, 3 to 5 minutes.
Remove from heat; stir in sour cream, pepper sauce, and bacon.
Cut tops off tomatoes.
Remove centers, leaving shells; drain.
Sprinkle shells with salt; fill with spinach mixture.
Bake in 8x8x2-inch baking pan at 375° for 20 to 25 minutes.
Top with cheese; heat till cheese melts
