Ripe Tomato Relish

Ingredients
  Ripe firm tomatoes 7 Cup (112 tbs)
  Onions 1 Cup (16 tbs), finely cut
  Celery 3 Cup (48 tbs), finely cut
  Canning salt 1⁄2 Cup (8 tbs)
  Green pepper 2 Cup (32 tbs), finely cut
  Sugar 4 1⁄2 Cup (72 tbs)
  Vinegar 2 Cup (32 tbs)
  Mustard seed 4 Teaspoon
Directions

Peel tomatoes and cut fine.
Combine tomatoes, onions, celery, and salt.
Let stand for several hours.
Stir with hands every hour or so.
Drain well, stirring while draining.
Add green pepper.
Mix sugar and vinegar well before adding along with mustard seed.
Keep in refrigerator unsealed.
Keeps indefinitely.
Very good used with meat, hamburgers or whatever.
