Green Tomato And Pepper Relish
|Salad oil||1⁄3 Cup (5.33 tbs)|
|Onions||3 Large, diced|
|Garlic||1 Clove (5 gm), minced|
|Green tomatoes||8 Large, cut into bite-sized chunks|
|Green peppers||4 Medium, cut into 1/4 inch-wide strips|
|Red peppers||4 Medium, cut into 1/4 inch-wide strips|
|Cider vinegar||3 Cup (48 tbs)|
|Packed light brown sugar||1 1⁄2 Cup (24 tbs)|
|Ground cinnamon||1 Teaspoon|
|Ground ginger||1 Teaspoon|
1. In 8-quart Dutch oven or heavy saucepot over medium heat, in hot salad oil, cook onions and garlic until tender, stirring occasionally. Add green tomatoes and remaining ingredients; over high heat, heat to boiling. Reduce heat to medium-low; cook, uncovered, 2 hours, stirring occasionally, until mixture thickens.
2. Spoon relish into large bowl; cover and refrigerate.
