Green Tomato And Pepper Relish

Ingredients
  Salad oil 1⁄3 Cup (5.33 tbs)
  Onions 3 Large, diced
  Garlic 1 Clove (5 gm), minced
  Green tomatoes 8 Large, cut into bite-sized chunks
  Green peppers 4 Medium, cut into 1/4 inch-wide strips
  Red peppers 4 Medium, cut into 1/4 inch-wide strips
  Cider vinegar 3 Cup (48 tbs)
  Packed light brown sugar 1 1⁄2 Cup (24 tbs)
  Salt 1 Tablespoon
  Ground cinnamon 1 Teaspoon
  Ground ginger 1 Teaspoon
Directions

1. In 8-quart Dutch oven or heavy saucepot over medium heat, in hot salad oil, cook onions and garlic until tender, stirring occasionally. Add green tomatoes and remaining ingredients; over high heat, heat to boiling. Reduce heat to medium-low; cook, uncovered, 2 hours, stirring occasionally, until mixture thickens.
2. Spoon relish into large bowl; cover and refrigerate.
