Grilled Caprese Bruschetta

Ingredients
  Ciabatta bread 1 Small, cut into 1 inch slices
  Mozzarella balls 8 Ounce, halved (About 20)
  Cherry tomatoes 1 Pint, halved
  Arugula 2 Cup (32 tbs)
  Extra virgin olive oil 3 Tablespoon
  Balsamic vinegar 2 Teaspoon
  Basil leaves 20 Tablespoon, thinly sliced
  Garlic 1 Clove (5 gm)
  Salt To Taste
Directions

1. Combine 2 tbsp of oil and vinegar in a bowl. Season with salt and pepper. Toss in cheese, tomatoes, ½ the basil and arugula.

2. Lightly brush bread with evoo. Grill for 2-3 minutes on each side. Rub each slice with garlic clove

3. Spoon tomato mixture over bread. Finish with salt and pepper and left over basil.
