Grilled Caprese Bruschetta
|Ciabatta bread||1 Small, cut into 1 inch slices|
|Mozzarella balls||8 Ounce, halved (About 20)|
|Cherry tomatoes||1 Pint, halved|
|Arugula||2 Cup (32 tbs)|
|Extra virgin olive oil||3 Tablespoon|
|Balsamic vinegar||2 Teaspoon|
|Basil leaves||20 Tablespoon, thinly sliced|
|Garlic||1 Clove (5 gm)|
1. Combine 2 tbsp of oil and vinegar in a bowl. Season with salt and pepper. Toss in cheese, tomatoes, ½ the basil and arugula.
2. Lightly brush bread with evoo. Grill for 2-3 minutes on each side. Rub each slice with garlic clove
3. Spoon tomato mixture over bread. Finish with salt and pepper and left over basil.
