Garnished Tomatoes

Ingredients
  Tomatoes 6 Large
  Broccoli florets 1⁄4 Cup (4 tbs), blanched
  Cauliflower florets 1⁄4 Cup (4 tbs), blanched
  Spinach leaves 1⁄4 Cup (4 tbs), shredded
  Mozzarella cheese 1⁄4 Cup (4 tbs), grated
  Garlic 1 Clove (5 gm), chopped
  Olive oil 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Preheat oven to 350 °F (175 °C).
Slice off tops from tomatoes.
With a spoon, scoop out pulp, reserving around 1/4 cup (60 mL) pulp.
Mix reserved pulp with remaining ingredients.
Stuff tomatoes with mixture.
Cook in oven 20 minutes or so.
