Hominy Cheddar And Tomatoes
|Shredded sharp cheddar cheese||4 Ounce (1 Cup)|
|Canned hominy||15 Ounce, drained (1 Can)|
|Canned tomatoes||16 Ounce, drained and cut into pieces (1 Can)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Chili powder||1 Teaspoon|
1. Reserve 1/2 cup cheese for topping. Combine remaining ingredients in a 1-quart glass casserole. Cook uncovered in microwave oven 6 minutes at High; stir once.
2. Stir vegetable mixture. Sprinkle 1/2 cup cheese over top. Cover with plastic wrap. Cook in microwave oven 1 to 1 1/2 minutes
at Medium-High, or until cheese melts.
