Coring And Peeling Tomatoes

Ingredients
  Heirloom tomatoes 1 Pound, cored, cut into bite-size pieces
  Peeled shallots 3 , minced to make 2 tablespoons (Food You Feel Good About)
  Fresh basil leaves 6 , minced (Food You Feel Good About)
  Sea salt To Taste (Wegmans)
  Freshly cracked pepper To Taste
  Raspberry wine vinegar 2 Tablespoon (Colavita)
  Extra virgin olive oil 1⁄4 Cup (4 tbs) (Wegmans)
Directions

Directions:

1. Toss tomato, shallots, and basil together in large bowl. Season to taste with sea salt and pepper.

2. Add vinegar and olive oil. Toss gently.

3. Cover; let stand 1 hour. Serve at room temp.

Chef Tip(s):
To mince basil, roll leaves together into cigar shape. Slice thinly widthwise.
