Marinated Zucchini On Tomatoes

Ingredients
  Zucchini 1 Pound, thinly sliced
  Cream style cottage cheese with chives 1⁄2 Cup (8 tbs)
  Dairy sour cream 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon
  Garlic salt 1⁄2 Teaspoon
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Tomatoes 2 Medium, sliced
  Endive/Parsley 1 Tablespoon
Directions

In covered saucepan cook zucchini in small amount of boiling water till crisp tender, 2 to 3 minutes.
Drain well.
In mixing bowl combine cottage cheese, sour cream, lemon juice, and garlic salt.
Add zucchini and green pepper; toss to coat.
Chill.
