  Eggs 4 , well beaten
  Salt 2 Teaspoon
  Cornstarch 1 Tablespoon
  Cold water 4 Tablespoon
  Monosodium glutamate 1⁄2 Teaspoon
  Bean curd square 5
  Oil 4 Tablespoon

Place the beaten eggs in a deep bowl and add the salt, cornstarch, cold water and the monosodium glutamate; mix thoroughly.
Heat a pan with 2 tablespoons oil and keep it hot.
Cut the curds into 1 1/2 inch squares, 1/4 inch thick, and dip into the egg mixture; saute for 2 minutes.
If the pan becomes too dry add more oil.
Serve very hot on a platter.
