Spiced Tofu

Ingredients
  Corn oil 1 Teaspoon
  Garlic 1 Clove (5 gm), finely chopped
  Ginger 1 Inch, finely chopped
  Onion 1 Large, finely chopped
  Red pepper 1⁄2 , cut into strips
  Ground coriander 1⁄2 Teaspoon
  Garam masala 1⁄2 Teaspoon
  Ground cumin 1⁄4 Teaspoon
  Firm tofu 8 Ounce, diced into 1-inch cubes
  Cashew nuts 3 Ounce, grated
  Ground cardamom 1⁄4 Teaspoon
  Sea salt To Taste
  Black pepper To Taste, freshly ground
  Wholemeal flour 1 Teaspoon
  Vegetable stock 1 Teaspoon (cold)
Directions

MAKING
1) First, preheat a browning dish to the maximum, as recommended by the manufacturers.
2) Quickly add the oil to this.
3) Then, stir in the garlic, ginger, onion, red pepper, ground coriander, garam masala and cumin.
4) On high power, cook for 2 minutes, stirring once.
5) Now, add the tofu and quickly turn the pieces over.
6) Now, add the cashew nuts and cardamom. Toss well.
7) On high power, cook covered for 2 minutes.
8) Add salt and pepper to taste.
9) In a bowl, blend the flour and vegetable stock together.
10) Over the prepared tofu, pour this mixture.
11) On high power, cook for 2 minutes or until the mix starts boiling.

SERVING
12) Serve the Spiced Tofu hot on a bed of rice.
