Scrambled Tofu

Ingredients
  Firm tofu 16 Ounce (16 Ounce Block)
  Garlic 3 Clove (15 gm), peeled and slice thin to make about 1 1/2 tablespoons
  Red bell pepper 3 Tablespoon, diced
  Olive oil 2 Tablespoon
  Turmeric 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
  Green onions/Chives 3⁄4 Cup (12 tbs), sliced (Scallions)
  Onion 1⁄2 Cup (8 tbs), minced
  Soy sauce 2 Teaspoon
  Fresh salsa 1 Tablespoon (For Garnish)
  Corn tortillas 1 Cup (16 tbs) (For Garnish)
Directions

GETTING READY
1) Drain out the tofu and crumble gently with hands.

MAKING
2) In a medium saute pan heat olive oil on medium heat.
3) Add garlic and diced pepper and sauté for 2 minutes.
4) Mix crumbled tofu, turmeric, salt, pepper, green onions (scallions, chives, or onions), and soy sauce.
5) Cook and stir tofu for 3 minutes.

SERVING
6) Serve with salsa and warm corn tortillas.
