Red Flannel Tofu

Ingredients
  Tofu 8 Ounce, cubed
  V8 juice 3⁄4 Cup (12 tbs)
  V 7 juice 3⁄4 Cup (12 tbs)
  Cayenne pepper 1 Dash
  Lemon juice 2 Tablespoon
  Oil 1 Tablespoon
  Tamari 1 Teaspoon
  Mushroom 2 1⁄2 Cup (40 tbs)
  Scallions 5 , sliced
  Cooked brown rice 1 Cup (16 tbs)
  Coarsely chopped parsley 1⁄4 Cup (4 tbs)
Directions

MAKING
1. In a bowl, mix together the V-7 Juice, cayenne and lemon juice and marinate the tofu in it for a while
2. In a wok, heat tamari and oil and cook mushrooms for several minutes; add scallions and cook for another couple of minutes or more
3. Add tofu mixture to it and, when it begins to steam, add rice and stir around till the whole mixture is very hot

SERVING
4. Serve at once, accompanied with green salad and whole wheat Pita bread
