Crystal Tofu

Ingredients
  Soy sauce 2 Tablespoon
  Sugar 2 Tablespoon
  Sake 2 Tablespoon
  Dashi broth 5 Tablespoon
  Firm tofu 10 Ounce (300 Gram)
  Potato starch/Cornstarch 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Ice cubes 1 Cup (16 tbs)
  Green onions 5 , minced
  Grated ginger 2 Tablespoon
  Nori sheet seaweed 1 , cut into thin strips
Directions

GETTING READY
1) In a saucepan, heat the ingredients for the dipping sauce; chill.
2) Drain, cut the tofu into 10-12 pieces and dust them with the potato starch.

MAKING
3) In a saucepan with salted boiling water, add the tofu pieces and boil for a min; chill in cold water, drain and place in a nice bowl over ice cubes.
4) Prepare the condiments.

SERVING
5) Serve with the dipping sauce and condiments.
