Spicy Fried Tofu
|Eggs||3 , lightly beaten|
|Peanut oil||1 Tablespoon|
|Crushed ginger root||1⁄4 Teaspoon|
|Green onion||1 , finely chopped (Including Top)|
|Soy sauce||1 Tablespoon|
Cut tofu in half horizontally; sprinkle with salt; let stand 10 minutes.
Pat dry; cut tofu in lx2-inch pieces.
In bowl, mix next three ingredients until smooth.
Heat 1 tablespoon peanut oil in a wok until hot.
Dip tofu pieces, one at a time, in batter; fry three to four at a time in oil until golden brown.
Heat 2 tablespoons oil in wok.
Add ginger root and green onion; stir fry 10 seconds.
Return tofu to wok with soy sauce; cover; cook 1 minute.
